The Review- The pictures in Intensely Chocolate are truly gorgeous – my mouth was watering as I flipped through the pages and gawked at Milk Chocolate Cheesecake Tarts, Bittersweet Chocolate Coins and frozen treats like Cocoa and Bittersweet Chocolate Sorbet, to name a few. The Gianduia Mousse Cake also caught my eye. This is a flourless cake described as having a light quality yet deeply flavored with the combination of chocolate and hazelnuts known as gianduia.
I decided to save the Gianduia Mousse Cake for another time and I made the Bittersweet Chocolate Caramel Swirl Brownies – a recipe that I could make with a few readily-available ingredients. Here they are!

For someone like myself, who likes to keep things quick and easy, this recipe was quite involved. The caramel sauce is prepared in two steps and the brownie batter required a few separate steps, melting the chocolate and butter, and sifting the flour before combining with the whipped eggs and sugar. So the directions were involved, but simple enough that even I was able to make these out-of-the ordinary brownies and receive rave reviews for my efforts. Nearly my entire family sampled the brownies – Grant and the kids and my parents. Here are some comments – “mmmm…they are REALLY good.” and “I think it’s yummy, another brownie please!”
After we all had our samples, that small plate of brownies actually made it to my niece’s birthday party – and they were a hit over there also. The brownies had a fudge-like consistency with just right amount of caramel flavor.
There is no doubt that true home chocolatiers will love Intensely Chocolate. Even the not so daring cooks like myself will find they can easily get adventurous and make extraordinary recipes like a confectioner (well sort of
! )
